Chicken and Egg Curry

Ingredients:

- 2 chicken breasts, cut into cubes
- 2 eggs
- 2 cloves of garlic, minced
- 1 tomato, diced
- 1 onion, diced
- 1 teaspoon of salt
- 1 teaspoon of coriander
- 1 teaspoon of mint leaves
- 1 teaspoon of curry leaves
- 2 tablespoons of corn flour
- 1 teaspoon of chilli powder

Instructions:

1. Heat a large pan over medium-high heat.

2. Add the chicken cubes and cook until lightly browned.

3. Add the garlic, tomato, onion, salt, coriander, mint leaves, curry leaves, and chilli powder. Cook for a few minutes until the vegetables are softened.

4. Add the eggs and stir to combine.

5. Reduce the heat to low and add the corn flour. Stir until the mixture is thick and creamy.

6. Simmer for 10 minutes, stirring occasionally.

7. Serve with steamed rice or naan bread. Enjoy!
