Make Chicken and Egg Fried Rice
Recipe Name: Chicken and Egg Fried Rice
Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 tomatoes, diced
- 2 eggs, beaten
- 1 tsp salt
- 1 onion, chopped
- Handful of fresh coriander, chopped
Instructions:
1. In a large skillet, heat some oil over medium heat. Add the diced chicken breast and cook until it is no longer pink.
2. Add the chopped onion and cook until it becomes translucent.
3. Stir in the diced tomatoes and cook for a few minutes until they soften.
4. Push the chicken and vegetable mixture to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
5. Mix everything together in the skillet and add the cooked rice. Stir well to combine.
6. Season the fried rice with salt and mix thoroughly.
7. Finally, sprinkle the chopped coriander over the top and give it a final stir.
