Chicken and Egg Tomato Bake
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 large eggs
- 2 large tomatoes, sliced
- 1/2 cup sour cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken breasts in a baking dish.
3. In a small bowl, whisk together eggs, sour cream, Parmesan cheese, salt and pepper.
4. Pour egg mixture over chicken breasts.
5. Top with tomato slices.
6. Drizzle olive oil over tomatoes.
7. Bake for 25-30 minutes, or until chicken is cooked through and tomatoes are lightly browned.
8. Serve warm. Enjoy!
