Chicken and Eggplant Pasta
Ingredients:
-1 cup cooked rice
-1/2 cup diced carrot
-1/2 cup diced eggplant
-1/2 cup cooked chicken, diced
-2 tablespoons oyster sauce
-1/2 cup cooked pasta
Instructions:
1. Heat a large skillet over medium-high heat.
2. Add the carrots and eggplant to the skillet and cook for 3-4 minutes, stirring occasionally.
3. Add the chicken and cook for an additional 2-3 minutes.
4. Add the oyster sauce and stir to combine.
5. Add the cooked rice and pasta and stir to combine.
6. Cook for an additional 3-4 minutes, stirring occasionally, until the ingredients are heated through.
7. Serve hot. Enjoy!
