Make Chicken and Eggplant Rice
Chicken and Eggplant Rice
Ingredients:
- 2 cups of cooked rice
- 2 chicken breasts, cut into cubes
- 1/2 cup of tomato paste
- 1 eggplant, cut into cubes
- 1 batat, cut into cubes
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until golden brown, about 5 minutes.
3. Add the eggplant and batat cubes and cook for another 5 minutes.
4. Add the tomato paste and stir to combine.
5. Add the cooked rice and stir to combine.
6. Season with salt and pepper to taste.
7. Cook for another 5 minutes, stirring occasionally.
8. Serve hot. Enjoy!
