Make Chicken and Green Chile Quesadillas
Chicken and Green Chile Quesadillas
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (4-ounce) can diced green chiles
- 2 cups shredded Monterey Jack cheese
- 4 (8-inch) flour tortillas
Instructions:
1. Preheat a large skillet over medium-high heat.
2. Cut the chicken breasts into small cubes and add to the skillet with the olive oil.
3. Sprinkle the garlic powder, chili powder, cumin, salt, and pepper over the chicken and cook for 8-10 minutes, stirring occasionally, until the chicken is cooked through.
4. Add the diced green chiles and cook for an additional 2 minutes.
5. Remove the chicken and chile mixture from the skillet and set aside.
6. Place one of the tortillas in the skillet and sprinkle 1/2 cup of the cheese over the top.
7. Top the cheese with half of the chicken and chile mixture.
8. Place a second tortilla on top and press down lightly.
9. Cook for 2-3 minutes until the cheese is melted and the bottom of the tortilla is golden brown.
10. Carefully flip the quesadilla over and cook for an additional 2-3 minutes until the other side is golden brown.
11. Remove the quesadilla from the skillet and repeat with the remaining ingredients.
12. Cut each quesadilla into wedges and serve. Enjoy!
