Chicken and Mushroom Fried Rice

Ingredients:

- 2 cups cooked white rice
- 2 tablespoons vegetable oil
- 2 boneless, skinless chicken breasts, cut into small cubes
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- Salt and pepper, to taste

Instructions:

1. Heat the vegetable oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook until lightly browned, about 5 minutes.

3. Add the onion and garlic and cook until softened, about 3 minutes.

4. Add the mushrooms and cook until softened, about 3 minutes.

5. Add the cooked rice and stir to combine.

6. Push the rice mixture to the side of the skillet and add the eggs.

7. Scramble the eggs until cooked through, about 2 minutes.

8. Stir the eggs into the rice mixture.

9. Add the soy sauce and sesame oil and stir to combine.

10. Season with salt and pepper, to taste.

11. Serve hot. Enjoy!
