Chicken and Mushroom Pot Pie

Ingredients:

- 2 boneless, skinless chicken breasts, cut into cubes
- 1 cup sliced mushrooms
- 2 cups diced potatoes
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup Panko breadcrumbs

Instructions:

1. Preheat oven to 375°F.

2. In a large skillet over medium heat, melt butter. Add chicken and mushrooms and cook until chicken is cooked through and mushrooms are tender, about 8 minutes.

3. Add potatoes and cook for an additional 5 minutes.

4. In a medium bowl, whisk together flour, salt, pepper, thyme, oregano, and garlic powder.

5. Slowly whisk in chicken broth and cream until smooth.

6. Pour sauce into skillet with chicken and vegetables and stir to combine.

7. Add frozen peas and corn and stir to combine.

8. Pour mixture into a 9x13 inch baking dish.

9. Sprinkle cheddar, mozzarella, and Parmesan cheeses over the top.

10. Sprinkle Panko breadcrumbs over the top.

11. Bake for 25-30 minutes, or until cheese is melted and bubbly.

12. Serve warm. Enjoy!
