Chicken and Mushroom Rice Bowl


-2 chicken breasts, cut into cubes
-1 cup mushrooms, sliced
-1 cup carrots, diced
-2 cups cooked white rice
-2 potatoes, diced
-2 tablespoons olive oil
-Salt and pepper to taste


1. Preheat oven to 350 degrees F.

2. In a large bowl, combine chicken cubes, mushrooms, carrots, potatoes, olive oil, salt, and pepper. Mix until all ingredients are evenly coated.

3. Spread the mixture onto a baking sheet and bake for 25 minutes, stirring occasionally.

4. Meanwhile, cook the rice according to package instructions.

5. Once chicken and vegetables are cooked through, remove from oven and combine with cooked rice.

6. Serve warm and enjoy!
