Chicken and Potato Burrito Bowl
Ingredients:
- 2 chicken breasts
- 2 potatoes, peeled and diced
- 1 cup of cooked rice
- 1 cucumber, diced
- 1 onion, diced
- 1/2 cup of grated cheese
- 2 eggs, beaten
- 1/2 cup of tomato sauce
- 2 tablespoons of tomato paste
- 1/2 cup of cooked beans
- 4 tortillas
Instructions:
1. Preheat oven to 350 degrees F.
2. Place chicken breasts on a baking sheet and bake for 20 minutes or until cooked through.
3. Meanwhile, in a large skillet, heat some oil over medium-high heat. Add potatoes and onion and cook until potatoes are tender, about 8 minutes.
4. Add cucumber, tomato sauce, tomato paste, and beans and cook for an additional 5 minutes.
5. Remove chicken from oven and shred. Add to the skillet and mix everything together.
6. Divide mixture into four portions and place each portion in the center of a tortilla. Top with grated cheese and fold the tortilla over to form a burrito.
7. Heat a large skillet over medium heat. Add burritos to the skillet and cook for 2-3 minutes per side, or until golden brown.
8. In a separate skillet, heat some oil over medium heat. Add beaten eggs and scramble until cooked through.
9. To assemble the burrito bowl, divide cooked rice between four bowls. Top with chicken and potato burrito, scrambled eggs, and any additional toppings of your choice. Enjoy!
