Make Chicken and Potato Frittata
Chicken and Potato Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked, diced chicken
- 4 eggs
- 1/2 cup shredded cheese
- 1/2 cup diced tomatoes
Instructions:
1. Preheat oven to 375°F.
2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion and garlic and cook until softened, about 3 minutes.
3. Add potatoes, salt, and pepper and cook until potatoes are tender, about 10 minutes.
4. Add chicken and cook for an additional 2 minutes.
5. In a medium bowl, whisk together eggs, cheese, and tomatoes.
6. Pour egg mixture over chicken and potatoes in the skillet and stir to combine.
7. Transfer skillet to preheated oven and bake until frittata is set and golden brown, about 20 minutes.
8. Let cool for 5 minutes before serving. Enjoy!
