Chicken and Potato Quesadillas

Ingredients:
2 chicken breasts
2 cups mashed potatoes
4 tortilla wraps
1 cup Velveeta cheese, shredded
2 tablespoons olive oil
2 cloves garlic, minced

Instructions:

1. Preheat oven to 350°F.

2. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.

3. Add chicken breasts and cook until golden brown and cooked through, about 8 minutes per side. Remove from heat and set aside.

4. Place one tortilla wrap on a baking sheet. Spread mashed potatoes over the wrap, leaving a 1-inch border.

5. Place chicken breasts on top of the mashed potatoes. Sprinkle with Velveeta cheese.

6. Place another tortilla wrap on top of the chicken and cheese.

7. Bake in preheated oven for 10 minutes, or until cheese is melted and tortillas are golden brown.

8. Cut into wedges and serve. Enjoy!
