Make Chicken and Potato Salad

Chicken and Potato Salad

Ingredients:

- 2 large chicken breasts
- 2 large potatoes
- 2 tomatoes
- 1 cucumber
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F.

2. Place chicken breasts on a baking sheet and bake for 25 minutes, or until cooked through.

3. Meanwhile, peel and dice potatoes and place in a large pot. Cover with cold water and bring to a boil. Boil for 10 minutes, or until potatoes are tender. Drain and set aside.

4. Dice tomatoes and cucumber and place in a large bowl.

5. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, salt and pepper.

6. Once chicken is cooked, let cool and then dice. Add to the bowl with the tomatoes and cucumbers.

7. Add potatoes to the bowl and pour dressing over the top. Toss to combine.

8. Serve chilled or at room temperature. Enjoy!
