Chicken and Potato Stew

Ingredients:

- 2 tablespoons olive oil
- 2 large onions, chopped
- 2 cloves garlic, minced
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons fresh parsley, chopped
- 2 large tomatoes, chopped
- 2 cups chicken broth
- 2 large potatoes, peeled and cut into 1-inch cubes
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium-high heat.

2. Add the onions and garlic and cook, stirring occasionally, until the onions are softened, about 5 minutes.

3. Add the chicken and cook, stirring occasionally, until the chicken is lightly browned, about 5 minutes.

4. Add the parsley, tomatoes, chicken broth, and potatoes. Bring to a boil, reduce the heat to low, and simmer, stirring occasionally, until the potatoes are tender, about 20 minutes.

5. Season with salt and pepper to taste. Serve hot.
