Make Chicken and Rice Bowl
Chicken and Rice Bowl
Ingredients:
-2 chicken breasts
-1 cup of uncooked white rice
-1 avocado, diced
-2 cloves of garlic, minced
-1 small onion, diced
-2 medium potatoes, diced
-2 tablespoons of olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine the diced potatoes, onion, garlic, olive oil, salt and pepper. Mix until everything is evenly coated.
3. Spread the potato mixture onto a baking sheet and bake for 25 minutes.
4. Meanwhile, cook the rice according to package instructions.
5. Heat a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, or until cooked through.
6. Once the potatoes are done, add them to the skillet with the chicken. Cook for an additional 5 minutes.
7. To assemble the bowls, divide the cooked rice among four bowls. Top with the chicken and potato mixture, and diced avocado.
8. Serve and enjoy!
