Chicken and Rice Bowl
Ingredients:
-2 chicken breasts
-1 cup of uncooked white rice
-1 cucumber, diced
-1 tomato, diced
-2 tablespoons of olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken breasts onto a baking sheet and season with salt and pepper. Bake in preheated oven for 25 minutes.
3. Meanwhile, cook the rice according to package instructions.
4. In a large bowl, combine cooked rice, diced cucumber, and diced tomato.
5. Once chicken is cooked, slice into strips and add to the bowl.
6. Drizzle with olive oil and season with salt and pepper to taste.
7. Serve and enjoy!
