Chicken and Rice Bowl

Ingredients:

- 2 potatoes, peeled and diced
- 1 cup of long grain white rice
- 2 cups of cooked chicken, diced
- 2 tomatoes, diced
- 2 carrots, peeled and diced
- 1 cucumber, diced
- 1 onion, diced

Instructions:

1. Preheat oven to 350 degrees F.

2. Place potatoes on a baking sheet and bake for 25 minutes, or until tender.

3. Meanwhile, cook the rice according to package instructions.

4. In a large bowl, combine the cooked potatoes, cooked rice, chicken, tomatoes, carrots, cucumber, and onion.

5. Mix until all ingredients are evenly distributed.

6. Serve warm. Enjoy!
