Chicken and Rice Burrito Bowl

Ingredients:

- 2 cups cooked white rice
- 2 cups cooked shredded chicken
- 1 cup cooked green peas
- 2 eggs, lightly beaten
- 1 avocado, diced
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, combine cooked rice, chicken, peas, and eggs. Mix until combined.

3. Grease a 9x13 inch baking dish with cooking spray and pour in the rice mixture.

4. Bake in preheated oven for 25 minutes, or until the top is golden brown and the center is cooked through.

5. Remove from oven and let cool for 5 minutes.

6. Divide the burrito bowl among four bowls and top with diced avocado.

7. Season with salt and pepper, to taste. Enjoy!
