Chicken and Rice Casserole
Ingredients:
- 2 chicken breasts, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 1 small onion, diced
- 1 cup shredded cheese
- 2 tablespoons chopped fresh parsley
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the diced chicken and garlic and cook until the chicken is lightly browned and cooked through, about 5 minutes.
3. In a large bowl, combine the cooked chicken and garlic, cooked rice, diced onion, shredded cheese, and chopped parsley. Stir to combine.
4. Transfer the mixture to a greased 9x13 inch baking dish.
5. Bake for 25 minutes, or until the cheese is melted and bubbly.
6. Serve warm. Enjoy!
