Make Chicken and Rice Casserole
Recipe Name: Chicken and Rice Casserole
Ingredients:
- 1 cup of rice
- 2 chicken breasts, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 teaspoon of paprika
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 1 cup of shredded cheese
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned on all sides.
3. Add the chopped onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are softened.
4. Stir in the rice, diced tomatoes, chicken broth, paprika, thyme, salt, and pepper. Bring the mixture to a simmer.
5. Transfer the mixture to a casserole dish and cover with foil.
6. Bake in the preheated oven for 25-30 minutes, or until the rice is cooked through.
7. Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
