Recipe Name: Chicken and Rice Casserole

Ingredients:
- 1 cup of rice
- 2 chicken breasts, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 teaspoon of paprika
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Olive oil

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some olive oil over medium heat.
3. Add the diced chicken breasts and cook until browned on all sides.
4. Add the chopped onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are soft.
5. Stir in the rice, diced tomatoes, chicken broth, paprika, thyme, salt, and pepper.
6. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 15 minutes or until the rice is cooked and the liquid is absorbed.
7. Transfer the mixture to a casserole dish and bake in the preheated oven for 20-25 minutes, or until the top is slightly crispy.
