Recipe Name: Chicken and Rice Casserole

Ingredients:
- 1 cup of rice
- 1 lb of chicken breast, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 tsp of paprika
- 1 tsp of dried thyme
- Salt and pepper to taste
- 1 cup of shredded cheese

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat and sauté the onion and garlic until fragrant.
3. Add the diced chicken breast to the skillet and cook until browned on all sides.
4. Stir in the bell pepper, diced tomatoes, chicken broth, paprika, thyme, salt, and pepper. Let the mixture simmer for a few minutes.
5. In a baking dish, spread the uncooked rice evenly on the bottom.
6. Pour the chicken and vegetable mixture over the rice, making sure it is evenly distributed.
7. Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
8. Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
9. Serve the chicken and rice casserole hot and enjoy!
