Make Chicken and Rice Casserole
Chicken and Rice Casserole
Ingredients:
- 2 chicken breasts, diced
- 2 cups of cooked white rice
- 2 potatoes, peeled and diced
- 2 tomatoes, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 2 minutes.
3. Add the chicken and cook for 5 minutes, stirring occasionally.
4. Add the potatoes, tomatoes, oregano, basil, salt, and pepper and cook for an additional 5 minutes.
5. In a large baking dish, combine the cooked chicken mixture with the cooked rice.
6. Bake in preheated oven for 25 minutes, or until the chicken is cooked through and the potatoes are tender.
7. Serve hot and enjoy!
