Chicken and Rice Casserole

Ingredients:
- 1 lb chicken breast, diced
- 1 cup white rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
3. In the same skillet, add a bit more oil if needed and sauté the diced onion and minced garlic until softened.
4. Add the white rice to the skillet and cook for a few minutes until slightly toasted.
5. Pour in the chicken broth and milk, and season with paprika, salt, and pepper. Stir well to combine.
6. Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let the rice cook for about 15-20 minutes, or until the liquid is absorbed and the rice is cooked through.
7. Stir in the cooked chicken and half of the shredded cheddar cheese.
8. Transfer the mixture to a baking dish and sprinkle the remaining cheddar cheese on top.
9. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
10. Garnish with fresh parsley before serving.
