Recipe Name: Chicken and Rice Casserole

Ingredients:
- 1 lb chicken breast, diced
- 1 cup white rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup frozen peas
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/2 cup shredded cheese

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
3. In the same skillet, add a bit more oil if needed and sauté the onion, garlic, and bell pepper until softened.
4. Add the rice to the skillet and cook for a few minutes until slightly toasted.
5. Pour in the chicken broth and add the paprika, thyme, salt, and pepper. Stir to combine.
6. Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for about 15 minutes or until the rice is almost cooked.
7. Stir in the frozen peas and cooked chicken, then transfer everything to a casserole dish.
8. Sprinkle the shredded cheese on top of the casserole.
9. Cover the dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
10. Serve hot and enjoy your delicious chicken and rice casserole!
