Recipe: Chicken and Rice Casserole

Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup white rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup frozen peas
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- Olive oil

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some olive oil over medium heat. Add the diced onion, minced garlic, and bell pepper. Cook until softened.
3. Add the chicken pieces to the skillet and cook until browned on all sides.
4. Stir in the rice, paprika, thyme, salt, and pepper. Cook for a few minutes to toast the rice.
5. Pour in the chicken broth and bring to a simmer. Let it cook for about 5 minutes.
6. Stir in the frozen peas.
7. Transfer the mixture to a casserole dish and cover with foil.
8. Bake in the preheated oven for 25-30 minutes, or until the rice is cooked and the chicken is tender.
9. Remove from the oven and let it rest for a few minutes before serving.
