Chicken and Rice Casserole

Ingredients:

-1 cup of uncooked white rice
-1 cup of uncooked pasta
-2 boneless, skinless chicken breasts, cut into cubes
-1 onion, diced
-2 shallots, diced
-3 cloves of garlic, minced
-2 carrots, diced
-1 cup of shredded red cabbage
-2 potatoes, diced
-1 cup of heavy cream

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large pot, bring 4 cups of water to a boil. Add the rice and pasta and cook for 10 minutes. Drain and set aside.

3. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.

4. Add the onion, shallots, garlic, carrots, and red cabbage to the skillet and cook for an additional 5 minutes.

5. In a 9x13 inch baking dish, layer the cooked rice and pasta, chicken mixture, and potatoes.

6. Pour the cream over the top and spread it evenly.

7. Bake for 25 minutes, or until the potatoes are tender.

8. Serve warm and enjoy!
