Make Chicken and Rice Pilaf

Chicken and Rice Pilaf


- 2 tablespoons olive oil
- 1 small onion, diced
- 1 cup diced tomato
- 1 cup cooked chicken, diced
- 2 cups cooked white rice
- 2 eggs, beaten
- Salt and pepper to taste


1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and cook until softened, about 5 minutes.

3. Add the tomato and cook for an additional 2 minutes.

4. Add the chicken and cook until heated through, about 3 minutes.

5. Add the cooked rice and stir to combine.

6. Pour the beaten eggs over the top of the mixture and stir to combine.

7. Cook until the eggs are set, about 5 minutes.

8. Season with salt and pepper to taste.

9. Serve warm. Enjoy!
