Make Chicken and Rice Pilaf
Chicken and Rice Pilaf
Ingredients:
- 2 tablespoons of olive oil
- 1 pound of boneless, skinless chicken breasts, cut into cubes
- 2 eggs, lightly beaten
- 2 tomatoes, diced
- Salt and pepper, to taste
- 2 cups of long-grain white rice
- 4 cups of water
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the eggs and tomatoes and cook until the eggs are cooked through, about 3 minutes.
4. Season with salt and pepper, to taste.
5. Add the rice and stir to combine.
6. Pour in the water and bring to a boil.
7. Reduce the heat to low, cover the skillet, and simmer for 20 minutes, or until the rice is cooked through and all the liquid has been absorbed.
8. Fluff the rice with a fork and serve. Enjoy!
