Chicken and Rice Pilaf

Ingredients:

- 2 tablespoons olive oil
- 2 tablespoons ghee
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 boneless, skinless chicken breast, cut into cubes
- 1 cup basmati rice
- 1 cup chicken broth
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic granules
- 1/2 teaspoon onion granules
- 1/2 teaspoon onion salt
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 2 tablespoons cornflour
- 1/4 cup milk
- 1/4 cup Greek yogurt
- 2 tablespoons oyster sauce
- 2 tablespoons soy sauce
- 1/2 cup cooked pasta
- 1 potato, peeled and diced
- 1/4 cup lettuce, chopped
- 1 tablespoon sesame oil

Instructions:

1. Heat the olive oil and ghee in a large skillet over medium-high heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the chicken and cook until golden brown, about 5 minutes.

4. Add the basmati rice and stir to combine.

5. Add the chicken broth, paprika, garlic granules, onion granules, onion salt, pepper, and salt and stir to combine.

6. Bring the mixture to a boil and reduce the heat to low. Cover and simmer for 15 minutes.

7. In a small bowl, whisk together the cornflour, milk, Greek yogurt, oyster sauce, and soy sauce until smooth.

8. Pour the mixture into the skillet and stir to combine.

9. Add the cooked pasta, potato, lettuce, and sesame oil and stir to combine.

10. Cover and simmer for an additional 10 minutes, or until the rice is cooked through.

11. Serve hot. Enjoy!
