Make Chicken and Rice Soup

Recipe Name: Chicken and Rice Soup

Ingredients:
- 1 cup of rice
- 4 cups of chicken broth
- 1 lb of chicken breast, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:
1. In a large pot, heat some oil over medium heat. Add the diced chicken breast and cook until browned on all sides.
2. Add the chopped onion, sliced carrots, chopped celery, and minced garlic to the pot. Cook for a few minutes until the vegetables start to soften.
3. Pour in the chicken broth and bring to a simmer.
4. Add the rice, dried thyme, salt, and pepper to the pot. Stir well to combine.
5. Cover the pot and let the soup simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
6. Taste and adjust the seasoning if needed.
7. Serve hot, garnished with fresh parsley.
