Make Chicken and Rice Stew
Chicken and Rice Stew
Ingredients:
- 2 tablespoons of olive oil
- 1 pound of boneless, skinless chicken breasts, cut into cubes
- 1 large potato, peeled and diced
- 1 cup of white rice
- 2 cups of chicken broth
- 2 tomatoes, diced
- 2 carrots, peeled and diced
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium-high heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the potato, rice, chicken broth, tomatoes, and carrots. Stir to combine.
4. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the rice is cooked through.
5. Season with salt and pepper to taste.
6. Serve hot. Enjoy!
