Chicken and Rice Stir-Fry
Ingredients:
- 2 cups of cooked white rice
- 2 chicken breasts, cut into cubes
- 1 red pepper, sliced
- 1 courgette, sliced
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 1 teaspoon of sesame oil
- Salt and pepper to taste
Instructions:
1. Heat the vegetable oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until they are golden brown and cooked through, about 5 minutes.
3. Add the garlic, red pepper, and courgette and cook for an additional 3 minutes.
4. Add the cooked rice, soy sauce, and sesame oil and stir to combine.
5. Cook for an additional 5 minutes, stirring occasionally.
6. Season with salt and pepper to taste.
7. Serve hot. Enjoy!
