Make Chicken and Rice Stir-Fry
Chicken and Rice Stir-Fry
Ingredients:
-1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
-1 cup uncooked white rice
-2 bell peppers, diced
-2 tablespoons olive oil
-2 cloves garlic, minced
-1 teaspoon ground ginger
-1 teaspoon ground cumin
-1 teaspoon paprika
-Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken and cook until golden brown, about 5 minutes.
3. Add the garlic, ginger, cumin, and paprika and cook for 1 minute.
4. Add the bell peppers and cook for an additional 3 minutes.
5. Add the uncooked rice and stir to combine.
6. Reduce heat to low, cover, and cook for 15 minutes or until the rice is cooked through.
7. Season with salt and pepper, to taste.
8. Serve hot. Enjoy!
