Chicken and Rice Tomato Potato Bowl

Ingredients:

- 2 chicken breasts, cubed
- 1 cup uncooked white rice
- 1 large tomato, diced
- 1 large potato, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees Fahrenheit.

2. In a large bowl, combine chicken cubes, diced tomatoes, diced potatoes, garlic powder, onion powder, salt, and pepper. Toss to combine.

3. Add olive oil to a large oven-safe skillet and heat over medium-high heat.

4. Add chicken and vegetable mixture to the skillet and cook for 5 minutes, stirring occasionally.

5. Add uncooked rice to the skillet and stir to combine.

6. Transfer skillet to preheated oven and bake for 25-30 minutes, or until chicken is cooked through and rice is tender.

7. Serve chicken and rice tomato potato bowl warm. Enjoy!
