Chicken and Rice with Green Peas
Ingredients:
- 2 cups of uncooked white rice
- 2 cups of chicken broth
- 2 tablespoons of olive oil
- 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of frozen green peas
Instructions:
1. In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for 20 minutes.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the chicken pieces and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until the chicken is cooked through, about 8 minutes.
3. Add the frozen green peas to the skillet and cook for an additional 3 minutes.
4. When the rice is finished cooking, fluff it with a fork and add it to the skillet with the chicken and green peas. Stir to combine and cook for an additional 2 minutes.
5. Serve the chicken and rice with green peas warm. Enjoy!
