Make Chicken and Rice with Onions

Chicken and Rice with Onions

Ingredients:
- 2 tablespoons olive oil
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 2 cups long grain white rice
- 4 cups chicken broth
- Salt and pepper, to taste

Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onions and garlic and cook until the onions are softened, about 5 minutes.
3. Add the chicken and cook until the chicken is cooked through, about 8 minutes.
4. Add the rice and stir to combine.
5. Pour in the chicken broth and bring to a boil.
6. Reduce the heat to low, cover the skillet, and simmer for 20 minutes.
7. Remove the lid and fluff the rice with a fork.
8. Season with salt and pepper, to taste.
9. Serve hot.
