Make Chicken and Rice with Parsley

Chicken and Rice with Parsley

Ingredients:

- 2 cups of uncooked white rice
- 2 cups of chicken broth
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 2 tablespoons of chopped fresh parsley

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the chicken cubes and cook until lightly browned, about 5 minutes.

3. Add the garlic, oregano, salt, and pepper and cook for 1 minute.

4. Add the uncooked rice and chicken broth and bring to a boil.

5. Reduce the heat to low, cover, and simmer for 20 minutes.

6. Remove the lid and fluff the rice with a fork.

7. Stir in the chopped parsley and serve.
