Chicken and Rice with Pickled Peppers

Ingredients:

- 2 boneless, skinless chicken breasts
- 2 cups of uncooked long-grain white rice
- 2 tablespoons of olive oil
- 1 red bell pepper, diced
- 1/2 cup of diced pickled peppers
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of paprika
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large skillet, heat the olive oil over medium-high heat.

3. Add the chicken breasts and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for 5-7 minutes, flipping once, until chicken is cooked through.

4. Remove chicken from skillet and set aside.

5. Add the diced bell pepper and pickled peppers to the skillet and cook for 3-4 minutes, stirring occasionally.

6. Add the uncooked rice to the skillet and stir to combine.

7. Place the chicken breasts back into the skillet and pour in 2 cups of water.

8. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until the rice is cooked through.

9. Serve the chicken and rice with pickled peppers hot. Enjoy!
