Chicken and Rice with Pickles and Potatoes
Ingredients:
- 2 cups of cooked white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 red bell pepper, diced
- 1/2 cup of diced pickles
- 2 potatoes, peeled and diced
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. In a large bowl, combine the cooked rice, chicken cubes, red bell pepper, pickles, and potatoes. Mix together until all ingredients are evenly distributed.
3. Transfer the mixture to a greased baking dish. Sprinkle with salt and pepper to taste.
4. Bake in preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
5. Serve hot and enjoy!
