Chicken and Rice with Roasted Cauliflower
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 cups uncooked long grain white rice
- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400°F.
2. Place chicken breasts on a baking sheet and season with salt and pepper. Bake for 20 minutes, or until cooked through.
3. Meanwhile, bring 2 cups of water to a boil in a medium saucepan. Add the rice and stir. Reduce heat to low, cover, and simmer for 15 minutes.
4. Place cauliflower florets on a separate baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 15 minutes, or until golden brown.
5. Once chicken and rice are cooked, fluff the rice with a fork and divide between four plates.
6. Slice the chicken breasts and divide between the plates.
7. Top each plate with roasted cauliflower and serve. Enjoy!
