Chicken and Rice with Thyme and Bay Leaves

Ingredients:

- 2 cups of uncooked long grain white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons of fresh thyme leaves
- 2 bay leaves
- 4 medium potatoes, peeled and cut into cubes
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees Fahrenheit.

2. In a large bowl, combine the uncooked rice, chicken cubes, thyme leaves, bay leaves, potatoes, olive oil, salt, and pepper. Mix until everything is evenly combined.

3. Transfer the mixture to a 9x13 inch baking dish.

4. Bake in preheated oven for 30 minutes, stirring once halfway through.

5. Remove from oven and let cool for 5 minutes before serving. Enjoy!
