Chicken and Rice with Yogurt Sauce


- 2 cups of long-grain white rice
- 4 cups of water
- 2 teaspoons of salt
- 2 tomatoes, diced
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 cup of plain yogurt
- 1 onion, diced
- 2 tablespoons of red sauce
- 1 cup of tomato sauce
- 1 can of chickpeas, drained and rinsed


1. In a large pot, bring the water to a boil. Add the rice, salt, and tomatoes and stir to combine.

2. Reduce the heat to low and cover the pot. Simmer for 20 minutes, or until the rice is cooked through.

3. Meanwhile, in a large skillet, heat a tablespoon of oil over medium heat. Add the chicken cubes and cook for 8-10 minutes, or until cooked through.

4. In a medium bowl, mix together the yogurt, onion, red sauce, and tomato sauce.

5. Once the rice is cooked, add the chicken cubes and chickpeas to the pot. Stir to combine.

6. Pour the yogurt sauce over the top and stir to combine.

7. Cover the pot and simmer for 5 minutes, or until the sauce is heated through.

8. Serve hot. Enjoy!
