Make Chicken and Rottini Stir-Fry

Chicken and Rottini Stir-Fry

Ingredients:

-1 lb. boneless, skinless chicken breasts, cut into cubes
-1/2 lb. rottini pasta
-1/2 lb. mushrooms, sliced
-1 red pepper, diced
-3 scallions, sliced
-2 tablespoons olive oil
-2 cloves garlic, minced
-1 teaspoon dried oregano
-Salt and pepper, to taste

Instructions:

1. Bring a large pot of salted water to a boil. Add the rottini and cook according to package instructions. Drain and set aside.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5 minutes.

3. Add the mushrooms, red pepper, scallions, garlic, oregano, salt and pepper. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.

4. Add the cooked rottini and stir to combine. Cook for an additional 2 minutes, or until heated through.

5. Serve hot. Enjoy!
