Chicken and Sausage Fusilli

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 2 chicken breasts, diced
- 2 sausages, diced
- 2 small tomatoes, diced
- 2 tablespoons tomato paste
- 2 cups chicken broth
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 8 ounces fusilli pasta
- 1/2 cup frozen corn
- 1/2 cup canned tuna, drained
- 2 eggs, lightly beaten
- 1/4 cup grated Parmesan cheese

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.

2. Add the chicken and sausage and cook until lightly browned, about 5 minutes.

3. Add the tomatoes, tomato paste, chicken broth, oregano, basil, thyme, red pepper flakes, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 10 minutes.

4. Meanwhile, cook the fusilli according to package directions.

5. Add the frozen corn, tuna, and eggs to the skillet and stir to combine. Simmer for 5 minutes.

6. Add the cooked fusilli to the skillet and stir to combine. Simmer for 5 minutes.

7. Serve the chicken and sausage fusilli with mashed potatoes and sprinkle with Parmesan cheese. Enjoy!
