Chicken and Spinach Penne Bake
Ingredients:
- 8 ounces whole grain penne
- 1 jar marinara sauce
- 1 pint grape tomatoes, halved
- 1 Vidalia onion, chopped
- 1/4 cup bread crumbs
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- 2 cloves garlic, minced
- 1 teaspoon chicken bouillon
- 1 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 tablespoons fresh basil, chopped
Instructions:
1. Preheat oven to 350 degrees F.
2. Bring a large pot of salted water to a boil. Add the penne and cook according to package instructions. Drain and set aside.
3. In a large bowl, combine the marinara sauce, grape tomatoes, onion, bread crumbs, spinach, Italian seasoning, garlic, and chicken bouillon. Mix until everything is evenly combined.
4. Grease a 9x13 inch baking dish. Spread the penne in the bottom of the dish. Pour the sauce mixture over the penne and spread evenly.
5. Sprinkle the mozzarella cheese over the top. Sprinkle the parmesan cheese over the top.
6. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
7. Sprinkle the fresh basil over the top. Serve warm. Enjoy!
