Make Chicken and Tomato Pasta
Chicken and Tomato Pasta
Ingredients:
- 2 tablespoons of olive oil
- 1/2 cup of diced onions
- 1/2 cup of diced bell peppers
- 2 cloves of garlic, minced
- 1/2 pound of boneless, skinless chicken breasts, cut into cubes
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 (14.5 ounce) can of diced tomatoes
- 1/2 cup of chicken broth
- 1/2 pound of uncooked pasta
- 2 large eggs, lightly beaten
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the onions and bell peppers and cook until softened, about 5 minutes.
3. Add the garlic and chicken and season with salt and pepper. Cook until the chicken is cooked through, about 8 minutes.
4. Add the diced tomatoes and chicken broth and bring to a simmer.
5. Add the pasta and cook until al dente, about 8 minutes.
6. Reduce the heat to low and stir in the eggs. Cook until the eggs are cooked through, about 3 minutes.
7. Serve the chicken and tomato pasta hot. Enjoy!
