Chicken and Tomato Pasta
Ingredients:
- 2 chicken breasts, cut into cubes
- 2 cups of uncooked pasta
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. In a large pot, cook pasta according to package instructions. Drain and set aside.
3. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and cook until golden brown, about 5 minutes.
4. Add onion and garlic to the skillet and cook until softened, about 3 minutes.
5. Add diced tomatoes and season with salt and pepper. Simmer for 5 minutes.
6. Add cooked pasta to the skillet and stir to combine.
7. Transfer the pasta and chicken mixture to a 9x13 inch baking dish. Sprinkle with mozzarella cheese.
8. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
9. Serve hot. Enjoy!
