Make Chicken and Tomato Pasta
Chicken and Tomato Pasta
Ingredients:
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- Salt and pepper, to taste
- 2 cups chicken broth
- 8 ounces dry penne pasta
- 1/4 cup freshly grated Parmesan cheese
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the chicken cubes and cook until golden brown, about 5 minutes.
2. Add the onion and garlic and cook until softened, about 3 minutes.
3. Add the cherry tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Cook for another 2 minutes.
4. Pour in the chicken broth and bring to a boil. Add the penne pasta and cook until al dente, about 8 minutes.
5. Remove from heat and stir in the Parmesan cheese. Serve warm.
