Make Chicken and Tomato Rice

Chicken and Tomato Rice

Ingredients:
- 1 cup of rice
- 1 chicken breast, diced
- 1 onion, chopped
- 2 tomatoes, diced
- Salt and pepper to taste
- 2 cups of chicken broth
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- Fresh parsley for garnish

Instructions:
1. In a large skillet, heat the olive oil over medium heat.
2. Add the chopped onion and cook until translucent.
3. Add the diced chicken breast to the skillet and cook until browned on all sides.
4. Stir in the diced tomatoes, garlic powder, paprika, salt, and pepper. Cook for another 2-3 minutes.
5. Add the rice to the skillet and stir to combine with the chicken and tomato mixture.
6. Pour in the chicken broth and bring to a boil.
7. Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
8. Fluff the rice with a fork and garnish with fresh parsley before serving.
